Sweet and Sour Chicken

I realized I haven’t posted a lot of recipes in a very long time. Well technically it’s only been a few months.

So I was in the mood for sweet and sour chicken. Except I didn’t want to go to the only decent chinese place here in town to order the food. Because well even with it being the best in town….it lacks a lot.

So why not makes something myself right??? And Even though my brother thought I was a lunatic for trying… I did make a sweet and sour Chicken casserole and I am happy to say…there were no left overs

What I used.

1 pound of chicken breast tenders cut into cubes

oil

flour

corn starch

seasonings

red, yellow and orange bell peppers

2 bags of boil in bag rice

A jar of Sweet and Sour Sauce that I got from Lidl

a couple of eggs

So I put the oil into the pan and let it heat up while I cut up the chicken and mixed the flour.

I put the flour and cornstarch in a bowl with seasonings. Then I beat a couple eggs in a separate bowl to do a egg wash.

As usual.. you put the chicken in the egg wash then the flour… After that. you put it in the hot oil and let it fry.

I put the sauce into a baking pan. So that I could transfer the chicken straight over once it got done cooking.

The thing I love about boil in bag rice is that I can put it in a bowl full of water stick in the microwave for  ten minutes and its done. The picture of the rice below….After it got done in the microwave I drained the water into my strainer. to try to get all of the water out.

I put the bell peppers into the frying pan and after that started cooking, I put the rice in with it.

Once everything was done I put everything into the baking pan and mixed it together, Baked at 355 for about 15 minutes. Yumm

BBQ ranch chicken pasta

I am a huge fan of ranch, but my husband isn’t. Thats why whenever I wanna make something with ranch in it…I dont write it on the board correctly. Like this was just BBQ chicken pasta….I’m evil…I know. This actually made enough for 2 night of dinner because I accidentally picked up 2lbs of elbow noodles. Honest mistake but yay me. I get a night off.

What you will need:

1lb chicken cut into pieces and cooked

1lb elbow pasta…i used 2 lbs oh well

1 can sweet corn

1 can diced tomatoes

1 cup BBQ sauce

1/2 cup rance

Cheese

Preheat the oven to 350 degrees F.

Cook your chicken. I’m pretty flexible with recipes. If it calls for cooked chicken…then cook it however you want. Here I just threw it on the stove and let it cook that way. Sometimes I’ll bake it.

While you’re cooking the chicken…cook the pasta according to package.

While both these items are cooking (and by the way…season your chicken however you want) you will need to mix the BBQ and ranch together.

Next add the corn and tomatoes.

Finally add the chicken and pasta.

Place in a baking dish, cover with cheese.

bake for 20 to 30 minutes until cheese has that nice bubbly look.

Cheesy spinach chicken pasta

We do not eat enough greens. At all. My nephew refuses to eat anything green. I try to include things that are healthy in our foods. Especially since we do eat out once a week. And we only do that because I mean hey I do need a break.

What you will need:

Chicken breast. I used 2 decent size

Penne pasta

1/2 cup to a cup sour cream

Cream cheese

Spinach

Ranch mix

Seasoning…your choice

Cheese….your choice

Preheat oven to 350 degree F

Cut the chicken up into bits. I usually do this before cooking because its easier…maybe a little more slimey….but its easier than cooking, waiting for it to cool and then cutting. This way I can just transfer it to whatever I’m cooking.

While the chicken is cooking. Boil the pasta. According to directions. Except you want to pull it off the stove just a little bit before its done. Dont worry it will finish in the oven.

Now, its time to mix some things together. I know it’s a lot of multitasking. But it doesn’t take much time. So here we will need to mix the cream cheese, sour cream. Ranch mix and spinach. It looks kind of gross but hey. It turns out good in the end.

When the pasta is done. Drain it. Add the cooked chicken and the pasta to the spinach mix. Stir to combine then transfer to oven. Cover with cheese and bake about 25 to 30 minutes.

Chicken pot pie and noodles

So chicken pot pie is one of the most beloved meals in my family. Honestly, it is. My recipe makes 4 pies. And those pies are gone within 2 days. I actually stole my moms recipe and threw in a little twist to make it my own.

Well last night I got a craving for some chicken pie. I mean its fall. It’s getting chilly. Who wouldn’t want some comfort food to make you warm? I know I did. Unfortunately, I didn’t have any pie crusts and I wasn’t in the mood to make any by hand. What I did have, however, is egg noodles. So the birth of chicken pie noodle soup was born. (Don’t take it too literal….I’m sure someone else has done this before.)

What you will need:

Roughly about a 1lb of chicken…cooked….I used 2 big chicken breast cut into cubes and baked.

1 bag egg noodles

2 cans cream of chicken soup

1 container chicken broth

1 bag frozen mixed veggies

Water. I used about 2 of the soup can full of water.

Seasonings…this is up in the air. It’s actually based on what one likes. Spicy or more herbs. Whatever your taste buds desire.

You will want to cook the chicken prior. I always cut it up bake it with some salt and pepper maybe some other seasons, just depends what I’m feeling

The next part is by far the easiest recipe you will find. Throw all the ingredients into a pot except the egg noodles. Let this warm thru. (Please don’t really throw the ingredients…unless you’re prepared to clean up the mess).

Once the veggies are just about done (I determine this by how easy is it to bite thru the carrot or pea) add the egg noodles. Allow to simmer until the noodles are done and serve.

While the broth is heating you can add the seasons you want. Im not a fan of recipes that try to tell people exactly what season they need to use….what if I don’t like basil? Is it really going to ruin the dish if I dont put it in? So, in pretty much all my recipes…the seasonings like lemon pepper, cayenne, etc is up to the reader. Do you like hot food? My brother does, so he would add more hot spices to his food.

But there you are. A simple yet comforting dish that doesn’t take long at all.

Potato soup with chicken and carrots

I am a sucker for good potato soup. Its warm and creamy. The perfect cold weather food. So I wanted to try adding some things to this already wonderful dish.

What you’ll need:

1 lb chicken (cut and cooked…I threw mine into a foil packet in the oven with some seasons….juicy)

2 cans cream of chicken soup

1 pack cream cheese (softened)

14 oz chicken broth

Carrors (this depends on how much is too much for your taste…I love carrots so I added quite a bit)

6 to 8 large potatoes (peeled and diced)

Boil your potatoes.

Once done take half of them and mash them. Like you normally would. This time I used a little bit of butter and heavy cream because I wanted it extra creamy….this helps to thicken the soup.

Take the other half into a pot with the broth, cream of chicken soup and the carrots. Let this simmer for just a bit. Stirring occasionally.

Add the mashed potatoes.

Slowly add the cream cheese stirring to mix it it.

Let this cook for about 15 to 20 mins.

Then TADA soup.

Doritos chicken casserole

I am all for the dinners that take less than an hour. Cook time and prep. Especially since I have dinner planmed a week in advanced. Every Sunday I plan the weeks meals and grocery shop. I find this way helps my anxiety. Trying to go about the day and then choose food kept me anxious all the time. Even tho there are those who don’t think SAHM (stay at home moms) do anything all day long. My day begins at 5 am and ends around 10 pm. With very little down time. 🙂 as I’m sure many other SAHM’s can relate.

So… Doritos chicken casserole!

What you will need:

1 lb chicken

1 bag egg noodles

2 cans cream of chicken soup

1 can corn (drained)

1 can tomatoes (drained)

Taco seasoning

Cheese

Doritos (crushed)

Preheat the oven to 350 degrees F

Cook chicken. This is such an easy recipe that you can cook the chicken anyway that you like. I just put it in the frying pan with some salt and pepper. (Non stick pan) its my favorite pan. Haha

Cook the egg noodles according to package.

While the chicken and egg noodles are cooking, put soup, corn, tomatoes and taco season in a bowl. Mix.

When the chicken is fine cooking, you will need to shred it. I just cut it into small pieces. Worked the same.

After cutting or shredding (really your preference) add it to the corn mix.

Mix it together and then add it to your egg noodles.

Place the new mixture into a baking dish.

Cover with cheese. Your preference on how much cheese you need.

Top with Doritos.

Bake until cheese is nice and bubbly. 🙂

Although it really doesn’t look pretty and I’m sure Gordon Ramsay would bash it on twitter hahaha it tasted pretty good. My toddler couldn’t get enough. My other daughter, well shes picky. (I’m working on that)

Japanese take out anyone??

So this is a late post of what we had for dinner last night. In our town we have this amazing place called Shotos. However, I am trying to pull my family into eating at home more than eating out. Not only is it healthier, its also cheaper.

What you will need:

Instant rice (I use the boil in bag because I suck at making rice)

1 lb chicken cut into cubes or small pieces

Teriyaki sauce

About 4 tbs Butter (not pictured cause I forgot)

Carrots (I used two bags because I end up feeding a lot of people)

1 cup brown sugar

Aluminum baking pans (I got mine from Sam’s. I got 36 for about 9 dollars. Score!)

Preheat oven to 350 degrees F

Cut your chicken. I always use boneless chicken breast tenders. I usually go to the meat market every two months and buy big packs which I section off into what I need. End up being a little over a pound per bag. I got enough meat to cook for two months for $206 thats really not bad.

Once you have cut your chicken, place it into the baking pan. Here you can season it if you like. I usually do salt and pepper for this dish. Now you need to put teriyaki sauce on the chicken. Mix it in good.

Next I added the rice and just enough water to cover it. About 1 and a half cups. Cover with tin foil and place in the oven. This will cook between 45 to 60 mins.

Next put your carrots into a seperate baking dish. Add the butter and brown sugar. Then put about 1/2 cup of water. Cover with tin foil and place in the oven. This will cook for about 30 to 45 minutes.

I forgot to take an after shot of what it all looked like because it didn’t stay very long. There was no left overs.

We also put this sauce on it call Yum Yum sauce. It is quite amazing. If you can find it in your local store, I suggest buying it.
