Okay. I like nachos. They’re pretty good. Versatile. Pretty much everyone enjoys them. Even my picky eater asked for seconds. A rare occurrence. What you’ll need: 1 lb ground beef 1 pack taco season Tortilla chips Cheese Diced tomatoes. Preheat the oven to 350 defrees F Brown the ground beef as you normally would with any other meal. Season with salt and pepper. When brown, drain. Add taco seasoning according to the package. While the meat with seasoning is simmering, place a layer of tortilla chips in a baking dish. Add a layer of meat, some tomatoes, cheese. Repeat layer until meat is gone and dish is full. Bake until cheese is bubbly. Here is where this meal gets flexible. I wanted to eat mine with lettuce and sour cream. However, my mother was over watching my youngest daughter made them a baked potato and used up the last of my sour cream. 😦 so i tried it with ranch and it was pretty yummy.
I am all for the dinners that take less than an hour. Cook time and prep. Especially since I have dinner planmed a week in advanced. Every Sunday I plan the weeks meals and grocery shop. I find this way helps my anxiety. Trying to go about the day and then choose food kept me anxious all the time. Even tho there are those who don’t think SAHM (stay at home moms) do anything all day long. My day begins at 5 am and ends around 10 pm. With very little down time. 🙂 as I’m sure many other SAHM’s can relate.
So… Doritos chicken casserole!
What you will need:
1 lb chicken
1 bag egg noodles
2 cans cream of chicken soup
1 can corn (drained)
1 can tomatoes (drained)
Preheat the oven to 350 degrees F
Cook chicken. This is such an easy recipe that you can cook the chicken anyway that you like. I just put it in the frying pan with some salt and pepper. (Non stick pan) its my favorite pan. Haha
Cook the egg noodles according to package.
While the chicken and egg noodles are cooking, put soup, corn, tomatoes and taco season in a bowl. Mix.
When the chicken is fine cooking, you will need to shred it. I just cut it into small pieces. Worked the same.
After cutting or shredding (really your preference) add it to the corn mix.
Mix it together and then add it to your egg noodles.
Place the new mixture into a baking dish.
Cover with cheese. Your preference on how much cheese you need.
Top with Doritos.
Bake until cheese is nice and bubbly. 🙂
Although it really doesn’t look pretty and I’m sure Gordon Ramsay would bash it on twitter hahaha it tasted pretty good. My toddler couldn’t get enough. My other daughter, well shes picky. (I’m working on that)
So my husband likes lasagna but I hate dealing with the noodles. So a few months back, ok more than a few, I read about this lasagna soup. It sounded good so I wanted to try it. Unfortunately, I have a huge issue with following recipes to the T.
I didn’t get the meat in the photo because I was already cooking it. I tend to like dinner done by 6 do my kid eats by 6 and can have shower by 7 bed before 9.
What do you need:
1 lb ground beef
1/2 cup ricotta cheese
1/2 cup of your favorite cheese blend (I like fiesta blend)
2 jars marinara sauce
Salt/pepper to taste
Brown the ground beef and garlic. Drain. Return to pan.
Add beef broth and both jars of sauce. I usually add a little water to the jars, shake then pour in the pan. That way no sauce is wasted.
Add cheese and lasagna noodles as well as seasonings. Now all you got to do is stir occasionally until the noodles are done. Quick one pot meal that is so good I don’t have any left over….Thats also why I didn’t get a photo of the finished project
There are some nights where you’re just too darn exhausted to cook. Well tonight was that night. So I pulled out this casserole.
Now lets just say today has been the day that I get into a lot of accidents. This morning while changing my daughter I turned backwards to grab the wipes and pulled the muscle thats on the collar bone. Ouch. Then I made the mistake of picking on my brother for his knee. Karma. What did I do? I slipped on some water and hit my knee on a door frame….lesson to learn…don’t pick on someones pain.
What are you going to need:
1 pack hotdogs
2 cans chili
1 can refrigerated biscuits
1 cup cheese
One big appetite
Preheat the oven to 350 degrees
Cut the hotdogs into slices or chunks. Totally depends on how big you want them.
Next add your cans of chili and stir together.
Cut your biscuits into chunks. You could tear them but I cut them. Its a texture thing for me I don’t like mushy on my hands. I know. Im weird.
Add your biscuits to the chili
Now you want to top with cheese.
Bake until the biscuits are no longer gooey. When its all done you’ll have a quick dump and bake casserole. Yummy
So this is a late post of what we had for dinner last night. In our town we have this amazing place called Shotos. However, I am trying to pull my family into eating at home more than eating out. Not only is it healthier, its also cheaper.
What you will need:
Instant rice (I use the boil in bag because I suck at making rice)
1 lb chicken cut into cubes or small pieces
About 4 tbs Butter (not pictured cause I forgot)
Carrots (I used two bags because I end up feeding a lot of people)
1 cup brown sugar
Aluminum baking pans (I got mine from Sam’s. I got 36 for about 9 dollars. Score!)
Preheat oven to 350 degrees F
Cut your chicken. I always use boneless chicken breast tenders. I usually go to the meat market every two months and buy big packs which I section off into what I need. End up being a little over a pound per bag. I got enough meat to cook for two months for $206 thats really not bad.
Once you have cut your chicken, place it into the baking pan. Here you can season it if you like. I usually do salt and pepper for this dish. Now you need to put teriyaki sauce on the chicken. Mix it in good.
Next I added the rice and just enough water to cover it. About 1 and a half cups. Cover with tin foil and place in the oven. This will cook between 45 to 60 mins.
Next put your carrots into a seperate baking dish. Add the butter and brown sugar. Then put about 1/2 cup of water. Cover with tin foil and place in the oven. This will cook for about 30 to 45 minutes.
I forgot to take an after shot of what it all looked like because it didn’t stay very long. There was no left overs.
We also put this sauce on it call Yum Yum sauce. It is quite amazing. If you can find it in your local store, I suggest buying it.
Now I’m not sure why it is called Mexican pie. It is more like a taco pie. This is something that my mom made for us all the time growing up. It was amazing. Now that I’m married and have kids of my own, I still enjoy my moms recipe. My mother enjoys that I cook it too because that means that we don’t have to do it.
What we need:
2 lbs of ground beef (I used 2 pounds because I cook for a lot of people and 2 pounds makes 4 pies)
4 Pillsbury frozen pie crust (Comes in a pack of 2 so just 2 packs)
2 cups of cheeses (I use the Fiesta style blend)
Re-fried beans. (The big can)
Preheat the oven to 350 degrees F.
First you need to cook the hamburger. Completely. I cannot stress the importance of cooking ground beef completely. Once it has finished cooking, you need to drain the meat. Then you will need to put the meat back into the pan with the packet of taco seasoning. Add water according to the packet. Let this sit for a few minutes. Then add the Salsa. I let this cook for a few minutes.
While the meat mixture is cooking, open the big can of re-fried beans, put them into a bowl and heat it up. I found that warm beans are easier to spread. Once the beans are warm spread the beans in the pies and up the sides. According to my mothers recipe, add cheese on top of the beans.

After spreading the beans and cheese, you will need to add the taco meat mixture on top and add more cheese.
The you just put it in the oven until the cheese is nice and bubbly. I added sour cream to my bowl and it was delicious. My picky eater actually ate two bowls. Enjoy!
