I am all for the dinners that take less than an hour. Cook time and prep. Especially since I have dinner planmed a week in advanced. Every Sunday I plan the weeks meals and grocery shop. I find this way helps my anxiety. Trying to go about the day and then choose food kept me anxious all the time. Even tho there are those who don’t think SAHM (stay at home moms) do anything all day long. My day begins at 5 am and ends around 10 pm. With very little down time. 🙂 as I’m sure many other SAHM’s can relate.
So… Doritos chicken casserole!
What you will need:
1 lb chicken
1 bag egg noodles
2 cans cream of chicken soup
1 can corn (drained)
1 can tomatoes (drained)
Preheat the oven to 350 degrees F
Cook chicken. This is such an easy recipe that you can cook the chicken anyway that you like. I just put it in the frying pan with some salt and pepper. (Non stick pan) its my favorite pan. Haha
Cook the egg noodles according to package.
While the chicken and egg noodles are cooking, put soup, corn, tomatoes and taco season in a bowl. Mix.
When the chicken is fine cooking, you will need to shred it. I just cut it into small pieces. Worked the same.
After cutting or shredding (really your preference) add it to the corn mix.
Mix it together and then add it to your egg noodles.
Place the new mixture into a baking dish.
Cover with cheese. Your preference on how much cheese you need.
Top with Doritos.
Bake until cheese is nice and bubbly. 🙂
Although it really doesn’t look pretty and I’m sure Gordon Ramsay would bash it on twitter hahaha it tasted pretty good. My toddler couldn’t get enough. My other daughter, well shes picky. (I’m working on that)
